Being up with my wife at this time of the morning is great for 3 reasons, (1) it's the only time we're alone, (2) we get to conversate & pick each other mind, (3) share a pot of good coffee

Tonights dinner was a success, we had Moroccan style Roast Chicken & Potatoes, with Thai Ginger & Sesame Salad.
For dessert, Steamed Pears with Dates, Walnuts & Honey sauce. It was very good & makes me think that I blew the one chance I took on learning to be a Nurse, when I should have found a way into Culinary School. Oh Well, at least I have the food network.

Whats Your Favorite Movie?
My favorite movie is
& the sequel, The Bourne Supremacy !!! Why because I love action movies and both of these movies have alot to offer in the way of action, from chase scenes to fight scenes its all here. If you're like me you are waiting for The Bourne Ultimatum which is the third & possibly final movie in this series. Which by the way isn't due to come out until August, 2007.

Grilled Mahi Mahi w/ Jerk Spice

This dish was supposed to turn out a little different but the recipe for some reason was unclear to me. Here's the recipe:
For the marinade: 1 red onion, roughly chopped 1 1/2 teaspoons dried thyme Green tops of 2 scallions, chopped 1 teaspoon allspice 1/2 teaspoon ground cinnamon 1 tablespoon white pepper 1/4 teaspoon ground nutmeg 1 jalapeno, chopped 2 tablespoons olive oil 3 teaspoons sea salt
For the fish: 4 (5-ounce) mahi mahi fillets Salt
Prepare the marinade: Place all ingredients into food processor and process for 15 seconds. (There will be extra marinade. Marinade can be refrigerated for 1 week or frozen up to 2 months.)
For the fish:
Season the fish with salt and spoon 2 teaspoons of the jerk marinade on each side. Place into a hot grill or grill pan and turn heat down to medium. After 2 minutes (should be brown) turn over and cook 3 to 5 minutes, until fish is cooked through.
For some strange reason I took the marinade part to mean, well I happen to look on the back of the Jerk seasoning bottle & noticed that the ingredients where the same as the recipe. In short, I put the jerk seasoning on the fish & grilled it & put the evoo(EXTRA VIRGIN OLIVE OIL) on the grill so it wouldn't stick. Also steamed some veggies...... It turned out (ok), NOT GREAT!!!!! wife & kids say it was really good but I think they're just being nice. Oh wellI'll get it next time for sure. By the way the dish I made didn't look anything like the picture you see.

Eating Right !

My family & I have finally decided to start eating right for the sake of loosing weight & being as healthy as possible. We're startng by grilling or steaming our foods & eating alot more veggies. By the way if anyone has recipes for grilling or steaming, send them to me. Heres a dish we made last week.
Steamed Salmon & Safron Rice very good and healthy!
